It was our desire to find recipes that were loaded with flavor, made with ingredients that could be purchased from most grocery stores or supermarkets, and do not use meat analogs. There's nothing wrong with an analog. Gardein, a thoughtful company, makes some great non-GMO analogs which can be purchased at Meijer and Kroger.
